Wicked Roasted Pear with Porridge and Orange


Roasted pears and porridge breakfast

I woke up super early this morning (couldn’t sleep, the joys of menopause) and I’m not very good at doing nothing or lying in bed. I thought I would make use of my time this morning making my partner a yummy breakfast, but what...He LOVES pears and Porridge so I decided to surprise him and make him a breakfast combined with his two favourite brekki foods and since I’ll be eating it too I’ll throw in orange-blossom water. With the help of Delicious magazine and my determination I made this scrumptious breakfast! Yummy combination of his favourite things to to eat.


Ingredients

  • Prepare porridge according to instructions on packet or follow one of my porridge recipes (under breakfast topic)

  • 200 gm honey

  • 1/2 cup freshly squeezed orange juice

  • 1 tablespoon grated orange rind

  • 1/4 cup freshly squeezed lemon

  • 2 teaspoons grated lemon rind

  • 1 teaspoon vanila extract

  • 4 pears, unpeeled/peeled (up to you), halved, cores removed.

  • 2 teaspoons orange-blossom water, or to taste



Method

  1. Preheat oven to 200C. In a bowl over medium heat, simmer honey, juices, rinds, and vanilla extract until reduced to a light syrup about 8 min.

  2. In a roasting pan lined with baking paper, place pears, cut-side up. Pour over half the honey mixture and roast, basting occasionally, until tender and beginning to caramelise about 20min Remove pears from pan, stir the orange-blossom water with the remaining honey mixture. Place pears on top of porridge and drizzle with syrup. YUUUMMM

You can store the pears in a container in the fridge for several days.
