I have finally gotten around to post a much requested recipe! A super, duper, easy, yummy chocolate cake recipe. If I were to be completely honest I would have to say I don’t get the obsession with chocolate cake. I mean yeah, it has sugar - which I sadly LOVE but I can’t say it would be my first choice of cakes to bake.
I do get a lot of people asking me for easy chocolate recipes and over the years I have honestly tried a million different kinds, and I have yet to find one that will give me that look every one else gets from eating a chocolate cake (see transformation pictures below)
I chose this cake because it’s a favourite with the parents and the children at the day care, and it's soooooo easy to make that the children at the daycare make it for our birthday parties.
Ingredients
2eggs
1½ cups sugar
2 cups self raising flour
1cup oil
1cup milk
½ cup cocoa
½ teaspoon salt
½ teaspoon bicarbonate of soda
1cup hot water
2teaspoons coffee
Ganache
250mls fresh cream
200g dark chocolate
Method
Preheat the oven to 180c.
Line a round 23cm cake tin with baking paper.
In a large bowl whisk together eggs and sugar, until incorporated, just for a couple of minutes (I just whisk by hand, using an egg beater).
Add oil and milk a little at a time.
Mix in dry ingredients until smooth.
Mix coffee in hot water and stir into cake batter a little at a time.
Pour into cake tin.
Bake for approx 40min.
Ganache
Place chocolate and cream in a saucepan over low heat and mix until chocolate has completely melted and you get a smooth texture.
Pour over cake and serve.
