I made these chia pots a couple of days ago and I have been like a little girl counting the days till I can post them. I have to say I am really chuffed at the way they turned out. That’s not how I imagined they would look. I had planned for the yoghurt be a big swirl sitting nicely on top of the chia pudding, the passion fruit running down the swirl, but the yoghurt didn’t hold and it started to drip as I began to photograph … but after looking at the photos I was really happy at the melting look. I think they look really good. It reminded me of my dad who used to say “Nava everything happens for a reason” I’ve been hearing his saying in my head A LOT lately… Anyhow, these awesome chia puddings are vegan, gluten-free, look great and taste delicious. They're simple to make and are a healthy breakfast/morning tea/afternoon tea or, as in my case, all three! They will keep up to 5 days in the fridge.
Ingredients For the strawberry chia pudding
180g frozen strawberries
2 teaspoons honey or maple syrup (you can use more or less, depending on how sweet you like it)
2 cups milk of your choice ( I used almond milk)
1/2 cup chia seeds
For Mango chia pudding
150g frozen mango
2 teaspoons honey or maple syrup (more or less, depending on how sweet you like it)
2 cups milk of your choice ( I used almond milk)
1/2 cup chia seeds
Method For Strawberry
Defrost strawberries in the microwave or in a pot on the stove, add honey or maple syrup. With a handheld mixer, blend strawberries, honey and 1/4 cup of milk (from the two cups of milk) and blend until smooth.
Stir in the rest of the milk. Add chia seeds and stir for a minute. Let sit for a min. then stir again and let sit in the fridge for a couple of hours or until it sets.
Repeat method for Mango pudding.
Topping For the strawberry chia pudding Coconut yoghurt mixed with my homemade strawberry jam. Crushed almonds, freeze-dried strawberries (yum I love the tangy taste) and desiccated coconut. For mango chia pudding: Coconut yoghurt, passion fruit, crushed pistachios and desiccated coconut.
