Let's talk SNACKS!
I’m always asked for healthy snack recipes, well mama bear’s here is the most versatile and easy snack recipe EVER and every time I make this for afternoon tea, I kid you not ,there is a stampede to the kitchen. I will add the different fillings I use at the bottom of the spinach and cheese recipe but will start with the MOST POUPULAR ONE!
Make room in the freezer so you have a flat area to put the logs on.
When rolling the pastry DON’T discard the blue plastic sheets that separate the pastry sheets!
You will need to reuse them.
Ingredients
1 ¼ cups passata cooking sauce
½ packet of frozen spinach thawed, no need to drain. (I use the finely chopped one)
1 ½ cups shredded cheese (I use what ever yellow cheese I have)
(I grate the cheese for the children because I don’t know what they use to keep the cheese from sticking together)
1 ½ tablespoon Italian herb mix
A packet of frozen puff pastry the one that has a pack of 6.
Method
In a bowl, mix passata sauce, spinach and Italian herbs.
Using a butter knife spread approx 2 tablespoos of mixture evenly on each sheet of puff pastry but leave a finger width strip at the top edge of the pastry so when you roll it, it will stick.
Sprinkle ¼ of cup of shredded cheese evenly on top of spinach sauce and roll the pastry into a log.
Roll the log in the blue plastic sheet (it will stop the rolls from sticking to one another).
Place in a large freezer bag and put in the freezer.
Repeat and add to freezer bag until you have used up all ingredients. This can last for AGES in the freezer.
When you are ready to bake, take however many rolls you need and allow them to thaw until they are firm to touch, but NOT soft. With a sharp kitchen knife cut into slices, place on a baking tray covered with baking paper.
Bake at 180 degrees until they are golden, not brown. The children DON’T LIKE THEM CRISPY However, if you like them crispy then bake till golden and crispy.
Other savoury fillings include: Avocado scrolls (not sure about freezing this one though) Ingredients:
Puff pastry
Avocado
Feta or boccocini cheese
cherry tomatoes
Salt & pepper
Method:
Spread avocado on pastry, leave a finger width strip at the top edge of the pastry so when you roll it, it will stick .
Grate feta or boccocini cheese, slice each tomato into three and spread them until they are spread out evenly on top of cheese add salt and pepper to taste and roll the pastry. Roll in blue wrapping, put in freezer bag and freeze, repeat and add to freezer bag.
Vegemite scrolls Ingredients:
Puff pastry
Vegemite
Butter
Grated cheese
Method
Mix equal parts softened butter and vegemite (according to taste), spread on puff pastry, leave a finger width strip at the top edge of the pastry so when you roll it, it will stick .
Sprinkle with grated cheese and roll. Roll in blue wrapping put in freezer bag and freeze.
Ricotta and Banana scrolls Ingredients
300gr full fat ricotta in a container not from deli
300gr full fat cottage cheese (If you want filling more creamy, use ¾ ricotta, ¼ part cottage cheese.)
1 small banana per puff pastry sheet
Teaspoon of honey or authentic maple syrup for every cup of filling Put container of honey in bowl of hot water, it will be very easy to scoop out and work with
Cinnamon according to taste, (I use about half a teaspoon)
Method
Mix ricotta, cottage cheese, cinnamon, honey or maple syrup in a bowl with a hand held kitchen wiz.
Dice banana into small pieces set aside.
Spread cheese mixture liberally and evenly, leave a finger width strip at the top edge of the pastry so when you roll it, it will stick, arrange diced bananas evenly on top. Roll pastry then roll in blue wrapping put in freezer bag and freeze. Repeat.
You can replace bnanana with apple, pear, berries etc.
