it has been so hectic preparing for the wedding (I still have to find shoes) and preparing for the muesli-making breakfast, and did I mention going to work? Its been fun but hectic, so when I tell you that I have had no time to make dinner, I mean I’ve had NO time. If it wasn’t for you guys, my family wouldn’t even have had this dinner, so they have you to thank for their meal.
This dinner takes no time at all, it’s delicious, nutritious covers all food groups and it really hits the spot.
This can be made for the family, for friends, weeknight or weekend. The lemon and pepper seasoning is really delicious and the crispy, roasted potatoes are to die for. I make them often. I didn’t put any spices on the vegetables because they don’t need it. As I said, there is enough on the potatoes and the chicken. I buy my lemon pepper seasoning from Green valley spices. I LOVE IT.
Ingredients Potatoes
8 baby potatoes, cut into quarters
2 tablespoons oil
1/2 tablespoon sweet paprika
Salt
Vegetables
1 red capsicum cut into slices
1 yellow capsicum cut into slices
1 small sweet potato sliced into circles
I only put a little salt on the sweet potatoes and capsicum
1 large purple onion cut into wedges
Salt
Oil
Chicken
1kg chicken thigh
3tbs oil
4tbs lemon and pepper spice
Method
Potatoes
Preheat the oven to 200c.
Mix oil, sweet paprika and salt in a bowl, add the potatoes and make sure they are thoroughly coated.
Transfer into a baking tray lined with baking paper and roast on the top wire for approx an hour crispy and golden on the outside, nice and soft on the inside.
Vegetables
Arrange vegetables on a shallow baking tray lined with baking paper, drizzle with oil and sprinkle with salt and pepper.
Place in the oven on the middle wire under the potatoes and roast for 30-35 min.
Chicken
In a bowl mix the lemon and pepper spice, coat the chicken thoroughly and transfer to a baking tray lined with baking paper.
Place a tray under the vegetables and roast for 30 minutes or until cooked through.
