Quinoa, Oats and Chai Tea Breakfast

Updated: Nov 4, 2020

I’m trying to get more balance in my life. I figure it’s way past time I started focusing on getting healthy, working less and having more fun. Since there’s no time like the present, on this glorious morning, I kicked off the day walking with my soul mate at Nielson Park, before coming home to this super-healthy but super-delicious breakfast.

The quantities below should last a week depending on how much you consume.

Ingredients

Oats Ingredients

  • 2 cups oats

  • 1/3 cup desiccated coconut

  • 2 cups coconut milk or your choice of milk

  • 3 ½ tablespoons of loose-leaf chai tea or a couple of chai tea bags

  • 2 ½ cups of hot water

  • 3 tablespoons LSA

  • 1 teaspoon cinnamon

Grains ingredients

  • ¼ quinoa

  • ¼ cup millet

  • ¼ cup buckwheat

  • 1 cup water or just enough to cover the grains

Method

  1. Brew 3 ½ heaped tablespoons of loose-leaf chai tea with 2 ½ cups of water. (You can use a couple of chai tea bags instead.) Allow to cool down.

  2. In a bowl, mix oats with coconut, cinnamon and LSA. Pour in milk, cooled chai tea. Soak in fridge overnight.

  3. In a second bowl mix the quinoa, millet and buckwheat, add water and soak in the fridge overnight.

Assemble

Mix in a breakfast bowl one cup of oat mixture, ¼ cup of grain mixture and heat in the microwave for three minutes, (I like it piping hot). Add a bit of milk, and your favourite topping. As you can see in the picture, I added a teaspoon of honey and date for sweetness, more coconut, a sprinkle of peanuts, a couple of pecans, berries banana and mango. You can add whatever you like. It really is DELICIOUS, and did I mention, super healthy.

Have a happy, healthy week in the kitchen,

Love,

Nava.

PS - I love hearing from you! Let me know how it went and feel free to spread the word/passion/love, the more the merrier!
