I’m trying to get more balance in my life. I figure it’s way past time I started focusing on getting healthy, working less and having more fun. Since there’s no time like the present, on this glorious morning, I kicked off the day walking with my soul mate at Nielson Park, before coming home to this super-healthy but super-delicious breakfast.
The quantities below should last a week depending on how much you consume.
Ingredients
Oats Ingredients
2 cups oats
1/3 cup desiccated coconut
2 cups coconut milk or your choice of milk
3 ½ tablespoons of loose-leaf chai tea or a couple of chai tea bags
2 ½ cups of hot water
3 tablespoons LSA
1 teaspoon cinnamon
Grains ingredients
¼ quinoa
¼ cup millet
¼ cup buckwheat
1 cup water or just enough to cover the grains
Method
Brew 3 ½ heaped tablespoons of loose-leaf chai tea with 2 ½ cups of water. (You can use a couple of chai tea bags instead.) Allow to cool down.
In a bowl, mix oats with coconut, cinnamon and LSA. Pour in milk, cooled chai tea. Soak in fridge overnight.
In a second bowl mix the quinoa, millet and buckwheat, add water and soak in the fridge overnight.
Assemble
Mix in a breakfast bowl one cup of oat mixture, ¼ cup of grain mixture and heat in the microwave for three minutes, (I like it piping hot). Add a bit of milk, and your favourite topping. As you can see in the picture, I added a teaspoon of honey and date for sweetness, more coconut, a sprinkle of peanuts, a couple of pecans, berries banana and mango. You can add whatever you like. It really is DELICIOUS, and did I mention, super healthy.
