When the garlic and pasta hit your mouth and land on your taste buds, that’s amore! I don’t eat pasta often but last week I was in the mood! I looked at the fridge and decided to see what I could make! I had two punnets of tomatoes, garlic, 1/2 a bunch of basil, goat feta and black olives. I thought that will do! I threw them all together, and I promise you, it’s one of the yummiest pasta I’ve had in a loooooong time! I do feel that I should warn you, the garlic is intense and if you’re a garlic lover like me then it’s just right, but if you’re not into a strong-tasting garlic dish then put the amount you’re comfortable with. The aroma coming out of the kitchen as I was cooking that garlic was exquisite (Can you say garlic is exquisite?). This is a simple dish if you don’t have much in the fridge and if you want something light with a salad.
Ingredients
2 punnets of cherry tomatoes, cut into quarters
100g goat feta cheese cut into small pieces (omit if you are vegan)
6 garlic cloves, crushed
1 teaspoon chilli flakes
4 tablespoons finely chopped basil
1/4 cup olive oil
1 small jar black olives crushed
sea salt
1/2 packet of spaghetti no 5 (250g)
Method
Pour the olive oil into a frying pan and cook crushed garlic on medium to high heat for a couple of minutes.
Reduce the heat to low, add the cherry tomatoes and cook until nice and soft.
Add chilli flakes, feta and sea salt. Stir for a few minutes tip the fetta has blended in. Turn the stove off and add olives.
Serve with cooked spaghetti.
