Orange chia pudding
Makes 2 large jars
I feel like I have been feeding you too much cake lately and I feel bad about that, so I decided to make up for it by making you a healthy orange chia pudding. Besides, oranges were on super special, and you know me, I can’t resist a bargain, apart from being imperfect on the outside (like me), these babies are juicy, super sweet and full of vitamin C. How can I not make you something deliciously, healthy to enjoy for your breakfast.
Since all my kids have left home, I feel like I have adopted all of you and I feel guilty if I don’t post regularly or give you enough variety…
This orange chia pudding is refreshing to eat, first thing in the morning. With a burst of zing from the orange zest, it will put a spring in your step.
Orange chia pudding
Ingredients
400mls of freshly squeezed OJ
80g (1/2) cup chia seeds
3/4 cup Greek yoghurt / non-dairy yoghurt /Passion fruit yoghurt
Lots of orange zest (optional but I love the stuff)
2 tablespoons of passion fruit pulp
½ -1 tablespoons honey/maple syrup
Topping
Ingredients
¼-1/3 cup yoghurt
1-2 table spoons Passion fruit (or according to taste)
Nuts and goji berries
Method
Mix all chia pudding ingredients together and give it a good stir
Let it settle for roughly 10 min
Then give it another good stir
Put in the fridge for a few hours

Method
Dollop yoghurt on top of chia pudding
Drizzle passionfruit, decorate with goji berries
Sprinkle nuts, and breakfast is done
