When I was 12 I was introduced to a sweet and salty flavoured dessert. That beautiful union of sweet and savoury was the beginning of a lifelong love affair and I’ve been experimenting and exploring that tantalising combo of contrasting flavours and textures ever since.
It’s a tough job; always having to taste these concoctions and deciding whether or not they are worthy of sharing.
Lucky for me they turn out pretty good and would score an 8/10 most times, but every now and then they score a perfect 10, just like Nadia Comaneci and Bo Derek (I know, we three have such a lot in common)! And I get so excited that I can’t wait to share the recipe and those tasty champs inevitably jump the long queue of recipes waiting to be published. Yes, I know I’m being discriminatory, but hey, I never said I was perfect..
This mouth watering dessert is not only a stunner - like our Bo Derek - but it will get your taste buds doing perfect cartwheels - just like the ones Nadia did on the balance beam - what can I say, I’ve impressed myself!
Made with a mixture of salty, crunchy pretzels, topped with layers of my homemade (sugar free) tangy, fruity berry jam, and topped with a sweet creamy goodness chantily cream to balance out the flavours. And just when you thought it can’t get better, (just like Nadia winning gold again) I throw on top another layer of pretzel mixture to add more texture and flavour, a layer of fresh juicy strawberries for that touch of freshness. And for the finale, another layer of creamy goodness to give it an impressive height, and top it all off with a sprinkle of pretzel mixture.

Note:
I used a knife to chop the pretzles because i wanted chunky pieces
I used up all the ingredients except for the jam. The jam can be stored in the fridge and used to spread on bread or as a topping for other desserts.
Ingredients for pretzel mixture
Enough For 5 jars (300mls size jars)
Ingredients for
Pretzel mixture
200g pretzels roughly chopped with a knife
8 (30g )tsp almond meal
1 tsp brown sugar
65g butter melted
Chia Berry jam

Or you can use store bought jam. If you are using store bought jam then I wouldn’t add sugar to the cream
Ingredients for cream Layer
300mls thickened cream
1 tbs custard powder
2 tablespoons sugar
2teaspoons Vanilla extract
Method
Whip all ingredients toghether until firm peaks form
Ingredients for strawberry layer
10 fresh strawberries thinly sliced
2 strawberries per jar
Method
Transfer a few tablespoons of pretzel mixture to a bowl and set a side.
Place a layer of pretzel mixture at the base of a 300mls jar. (roughly two tablespoons)
Add a layer of berry chia jam (roughly 2 tablespoons per jar)
A layer of cream (two tablespoons per jar)
Another layer of pretzel mixture. (roughly two tablespoons)
A layer of fresh, sliced strawberries (two strawberries per jar)
Another layer of berry chia jam (two tablespoons)
Another layer of creamy goodness (two tablespoons)
Sprinkle pretzel mixture on top of final cream layer with the mixture you set a side
