I posted this recipe a while ago I have tweaked it a little since and it’s even better.
Who says healthy food can’t look fantastic and taste great? I make this dish for my little bubbas at Nava’s place and for my family.
For my babies, I spread the mixture on a flat tray and bake it for 15 minutes, then I cut it into little strips and let them feed themselves. Sometimes I use cookie cutters and make shapes so they can learn about shapes and have fun at lunch. At home I either make burgers out of the mince and serve them in a homemade bread roll with salad, caramelised onions and chips, or I make loads of little round balls and serve them on pita covered in hummus or some other delicious spread, And I add salad, so it’s even healthier.
We absolutely love this dish, you can have it for lunch or dinner, dress it up or down, you can eat it with bread or chips or some rabbit food. Either way, this dish is super versatile, healthy and uber delicious.
Ingredients
125g frozen spinach, thawed and drained of any liquid
or one medium zucchini, grated
1 carrot, grated
1 small onion, grated
500g chicken mince
1 medium-size brown onion, grated
1-2 garlic cloves, crushed
3 tablespoons parsley or coriander, finely chopped
1/2 cup any grated cheese. I use 1/4 cup of tasty and 1/4 cup grated mozzarella
2 eggs
1 &1/4 cups rolled oats
½ tsp sweet paprika
½ tsp curry
¼ tsp ground cumin
¼ tsp turmeric
1 ¼ tsp onion salt
Pepper to taste
Method
Using your hands, mix all of the above in a bowl until well incorporated.
Place in the fridge for 2 hours
Preheat the oven to 200C
Line a couple of baking trays with baking paper.
Wet hands a little and start to form balls, (I made 33 balls each weighing 30g) place them on prepared trays and cook in the oven for 15-20 minutes.
I don’t use oil but if you want to use a little oil, just spray some on.
