Happy birthday to my boss. She laughs that I call her boss, Paula doesn’t have a bossy bone in her body, but I love having her as my employer. Paula is the most easygoing person I could ever wish to work for. A wonderful mum to her three gorgeous children she is considerate and thoughtful she is happy to let me do my thing in the kitchen. A soft and moist this delicious chocolate cake takes no time to make,

Ingredients Preheat the oven to 170C 1 tablespoon baking powder (10g) 140g self-raising flour (1 cup) 70g drinking chocolate (little more then 1/3 cup) 70g cocoa (little more then 1/3 cup) 200g castor sugar 5 large eggs 59g each 200mls oil 180mls pure cream METHOD Grease a springform 22cm baking tin or a Bundt cake tin with oil and some melted butter using a basting brush, brush tin with mixture liberally. Sift baking powder, SRF, drinking chocolate and coco into a bowl and set aside. In a standalone mixer or a handheld mixer, using the whisk attachment, whisk the eggs and sugar until tripled in volume and pale in colour, roughly 8 min. In a slow and steady stream, while whisking, pour the cream then the oil. Add dry sifted ingredients to wet ingredients, whisk until incorporated and batter is lump free 2-3 min max. Bake in the oven for 50min or until skewer comes out clean when inserted in the middle of the cake.
