I have been promising to post this for aaaaaagggggesss and I keep forgetting and I’m really sorry… but now I have remembered and here it is. I made this divine cream cheese log for my cooking-with-Nava experience and it was such a hit that it was the first thing to be devoured. It's also the EASIEST thing to make. It looks really impressive and the taste, oh the taste is just exquisite. I would never eat Philadelphia cream cheese on its own but the combination of these ingredients is just heavenly and every calorie-filled bite is so gratifying.
Ingredients
250g Philadelphia cream cheese at room temperature (cheese should be nice and soft)
4 tablespoons dried cranberries
3 tablespoons shelled and cracked pistachios
1 1/2 tablespoons honey
Method
In a bowl, using a spoon, mix the honey with the cheese. Once the honey has been well incorporated, add the nuts and cranberries.
Using your hands make a ball then place it on your kitchen bench, and still using your hands, roll the ball into an even log. If your hands are sticky, then wet them a little with water.
Seal the log with a plastic wrap, nice and tight so it keeps its shape, and place on a small platter in the fridge for a couple of hours until it sets.
Serve with crackers.
