Coconut and Quinoa Porridge

Folks, is it just me or is anyone else emotional eating? I have been really hungry, and with social distancing, I have been staying home a lot and my new best friend is a big tall white box who stands seductively in his little alcove, whispering that I should visit his cool rich interior once more with the promise of tasty delights. But, me and Mr Frosty have a love/ hate relationship. Truth be told I can’t stay away but it's not just our relationship that's ballooning, and I put the blame totally on him for my new expansiveness. Looks like I’m going to have to start practising keeping a social distance from my new BFF. So I am going to have to try to find meals that will keep me full longer and hopefully satisfy the nervous edge.

This creamy coconut quinoa porridge is filling and can be made in large quantities.

The richness of this breakfast will depend on the ratio of the coconut milk to water. If you like it rich and creamy then use more milk coconut and less water. I found the ratio of 3/4 cup coconut milk to 1 &1/2 cups water was rich enough.

Ingredients

  • 3/4 cup quinoa

  • 1 cup of coconut milk

  • 2 cups of water

  • pinch of salt

  • 3-4 teaspoons of vanilla extract

  • 2 teaspoon cinnamon

  • 1 tablespoon honey/maple syrup

 

Method

  1. In a small saucepan bring quinoa and water to a boil (with the lid on) reduce heat, cook until almost all the water is absorbed, about 15 minutes.

  2. Stir in coconut milk, cinnamon, salt, vanilla extract, continue to simmer, on low heat for another 10 minutes.

  3. Serve with the milk of your choice, fresh fruit, dried fruit, nuts and seeds.
