It's chocolate celebration time!
If I were to be completely honest I would have to say I don’t get the obsession with chocolate cake. I mean yeah, it has sugar - which I sadly LOVE but I can’t say it would be my first choice of cakes to bake.
I do get a lot of people asking me for easy chocolate recipes and over the years I have honestly tried a million different kinds, and I have yet to find one that will give me that look every one else gets from eating a chocolate cake. I made this cake for two young boys for their birthday and I wanted to make it special by adding star berries dipped in chocolate.
It’s so easy to make that the children at the daycare make it for our birthday parties and if they can do it, you can do!
Ingredients
· 2eggs
· 1½ cups sugar
2cups self raising flour
· 1cup oil
· 1cup milk
· ½ cup cocoa
· ½ teaspoon salt
· ½ teaspoon bicarbonate of soda
· 1 cup hot water mixed with coffee (strength is up to you I used 1 table spoon instant coffee).
Ganache
· 250mls fresh cream
· 200g dark chocolate
Method
Preheat the oven to 180c
Line a round 23cm cake tin with baking paper
1. In a large bowl whisk together eggs and sugar, until incorporated.
2. add oil and milk a little at a time
3. mix in dry ingredients until smooth
4.stir hot coffee into cake batter a little at a time
5. pour into cake tin
6. bake for aprox 40min
Ganache
Ingredients
· 250g dark chocolate
· 250mls cream
Method
1. Place chocolate and cream in a saucepan over low heat and mix until chocolate has completely melted and you get a smooth texture.
2. Pour over cake and serve
Chocolate covered straberries
500 strawberries, washed and patted dry
150g dark chocolate
150g white chocolate
Method
You can prepare this a day a head
Line 2 flat trays with baking paper and set a side
Place dark chocolate in microwave-safe bowl. Microwave chocolate for aprox 35 seconds. Remove from microwave and give it a stir. Continue to microwave in 10 seconds increments, stirring frequently, until the chocolate has completely melted and smooth.
Using half of the strawberries and working with one strawberry at a time, pick up a strawberry by the stem and dip 3/4 of the strawberry into the dark melted chocolate , allow access chocolate to drip . Carefully lay the dipped strawberry on its side on the baking sheet. Once you have used up half the strawberries.
Repeat using white melted chocolate with remaining strawberries.
Allow to cool down in the fridge, about 10min.
When strawberries are ready melt the chocolate again and using a teaspoon, dip the spoon into melt dark chocolate and drizzle over white chocolate covered strawberries.
Using a new spoon repeat with dark chocolate.
