Chai Tea Porridge with Fig and Hazelnuts

With the cold weather upon us, what’s a better way to start the day than with a yummy hot, tasty, healthy porridge. Everyone has an opinion as to what goes perfectly with porridge, but let’s be honest guys, EVERYTHING goes well with porridge, because it’s a blank canvas: rolled oats in water taste like cardboard, and that’s why it’s a cook’s dream. You can explore a variety of flavours, as you will discover if you continue to follow me this winter. I will be trying out different combinations of flavours and hope for the BEST! Here is my first of hopefully many good ones.

 

Ingredients

For two people

  • 1 cup rolled oats

  • 1 cup water

  • 1 cup strong chai tea

  • 1 1/2 teaspoons chia seeds

  • 1 fresh fig

  • Crushed roasted hazelnuts

  • Desiccated coconut

  • Honey or maple syrup

 

Method

  1. In a pot on medium to high heat cook oats with water and chai tea, stir until water has almost evaporated. Remove from heat and stir in Chia seeds.

  2. Place porridge in a bowl, sprinkle coconut, hazelnuts, drizzles honey/maple syrup, pour your favourite milk, enjoy hot!
