Broccoli bake
Helllo my fellow foodies! I made this cheesy broccoli bake a few weeks back and forgot to share!
I was basically in the mood for something warm and comforting, tasty and cheesy.
I was in a Veruca kind of mood (if u don’t know who Veruca is look up the original Willy Wonker movie ) . I wanted comfort food and I wanted it NOW! This dish is quick to make and with a few pantry staple ingredients it will be ready in no time at all 🤤
So for all the Verucas out there who don’t want to wait too long for this delish dish, this one is for you xx
Ingredients
500g Broccoli
1 large leek (if you don’t have leek use an onion but if you can use the leek)
150mls cream (you can use light cream)
3 large eggs
30g good quality herb butter
80g mozzarella + 55g mozzarella
20g grated Parmesan
Salt and pepper to taste
1 teaspoon each;
Oregano
Parsley flakes
Coriander leaves
Method
Preheat the oven to 200C
Remove stem from broccoli and place florets in a steamer for about 5 min or until they are soft but not so soft that when you touch them they fall apart.
Set broccoli aside to cool down.
Slice white part of leek and over medium heat, cook leek with herbed butter until soft.
To a medium size bowl add three large eggs and whisk with an egg beater. Add cream in a steady stream, while you whisk.
Mix in herbs, salt and pepper.
Fold the parmigiana, 80g mozzarella and the broccoli into the egg mixture.
Transfer to a baking dish lined with baking paper, sprinkle 55g on top and bake for 30min.
I baked it for 30 min in my oven.
