Acai Breakfast

Happy Wednesday beautiful people,

I’ve had lots of people ask me, in private, so I won’t mention any name (Rita), do I have any quick breakfast recipes that you don’t have to spend too much time making, and that require ZERO cooking!

There was only one breakfast that fits that criteria! An acai breakfast bowl!

The acai berry is the mother of all BERRIES. This queen of berries has a higher concentration of antioxidants than any other. They are supposed to improve cholesterol levels and boost brain function, and they are low in sugar but apparently high in good fat (I guess nothing is perfect).

This delicious, healthy, no-sugar breakfast bowl is the perfect way to start your hot summer days, and it only takes five minutes to make.

Ingredients

  • 200g pure unsweetened acai (frozen)

  • 200ml pure coconut water

  • 1 chopped frozen banana

  • Toppings of your choice (nuts, fruits, seeds, edible flowers - my suggestions at the bottom)

 

Method

  1. Blend banana and coconut water in a blender until smooth.

  2. Break the acai with the back of a knife, add to the banana and coconut water and blend again till smooth.

  3. Decorate with your favourite fruit topping, or you can use mine.

Topping

  • 1 tablespoon peanut butter

  • Handful of coconut flakes

  • 1 kiwi fruit, sliced

  • Sliced strawberry

  • 1/2 banana sliced

  • 2 tablespoons toasted meusilie

  • A sprinkle of chia seeds and edible flowers


That combination is DELICIOUS
