A summers breakfast


Happy Monday everyone!

I am hoping to go and visit my son this week for a couple of days (he lives, outside Byron ) and I am really excited, so I am going to pretend it’s a sunny day, today and I am going to enjoy a summer breakfast.

ingredients

1 cup of strawberries or fruit of your choice

1 cup of passionfruit pulp

1/3 cup chia seeds +2 tablespoons

½ cup boiling water

2 tablespoons honey or maple syrup or a sweetener of your choice

3 teaspoons vanilla extract

Pinch of salt

1 ½ cups yogurt of your choice I

1 ½ cups milk of your choice

2-3 tablespoons shredded coconut


Method

Puree strawberries or any fruit you want (if frozen, thaw fruit first)

In a heat-proof bowl, mix the chia seeds with the hot water. Leave it to rest for about 5 minutes before stirring in the honey or preferred sweetener. Stir in the vanilla extract and milk of choice.

In a separate bowl mix the coconut and yoghurt and add to chia mixture, mix thoroughly to combine.

Transfer to a container or a large jar and seal.

Keep in the fridge up to 5 days.
